If you have logged in to your Google account while using Google for searching, and you have enabled Web history when you signed up, you still have the chance to check what you have searched in the past.

The point of deleting your browser history is that you don't want anyone to be able to find which sites you have visited.
I'm not an english native speaker, but the word delete means erasing, it means the data is gone, which is exactly what you wanted to when you asked Chrome to delete it. Otherwise it would have been called "hide" or something.
If you want Chrome to have multiple level of "deletion" (like "hide, delete, purge" for example), submit a feature request to Google. Good luck ;-)
